To set filters in Outlook Express:
Go to Tools > Message Rules > Mail

There you will find a number of ways of “filtering” your email. A word of caution: filtering is literal. For example, if you want to filter out the spam email that wants you to send money to Nigeria or some other country in return for a larger sum of money, you might set up the following conditions:
Filtering for specific words in the body of the message:
One thing that seems to be common in the bulk of these email messages is the word “foreign”. (see http://potifos.com/fraud/) We will set the conditions to look for a specific word – “foreign” in the body of the incoming messages.

By clicking on the blue “contains specific words” hyperlink, we get the next screen in which we enter the word or phrase to look for. Here we type in the word “foreign” and click on the “Add” button then click on “OK” on the next window.

We have no created New Mail Rule #1 which will automatically delete *any* message that comes in with the word "foreign" in the body of the message.
In Outlook, the process is similar.
Click on Tools > Rules Wizard...

Then click on New...

The next picture shows that you can set up the same conditions as in Outlook Express.
